Fit Snack’s Top 4 Ingredient Snacks to Make at Home:

  • Red Ants on a Log (the Fit Snack way!):  
    • Ingredients: Celery sticks, natural peanut butter (or almond butter), mixed nut crumbles, and gogi berries
    • Instructions: simply spread nut butter over celery sticks, top with mixed nuts and dried gogi berries – YUM! Place in tupperware and go.
  • Greek Yogurt Breakfast Bark
    • Ingredients: 1 1/2 cups plain Greek yogurt, 3 tbs maple syrup, 1/2 cup Quaker Real Medleys SuperGrains Blueberry Pecan Granola, 1/2 cup blueberries, 3 to 4 sliced strawberries (add chia seeds if you want some extra nutrients too!)
    • Instructions: Line a baking sheet with parchment paper and set aside, mix Greek yogurt and syrup in a bowl until combined. Pour onto prepared baking sheet and spread into a thin layer. Top with Real Medleys SuperGrains Blueberry Pecan Granola, blueberries, and strawberries, place in the freezer for two hours, or overnight, until the bark is fully frozen. Slice into desired squares when ready to eat!
  • Almond Energy Balls:
    • Ingredients: 1¼ cup gluten-free rolled oats, 1¼ cup chopped pitted dates, ½ cup no-salt added unsweetened almond butter, 1 teaspoon pure almond extract
    • Instructions: Place ingredients into food processor and process until smooth.  Use spoon to scoop out and create firm energy balls that stick together. Chill…
  • Zucchini Chips: 
    • Ingredients: 1 lb (about 4 cups) thin sliced Zucchini, 1/8 tsp salt, 1 ounce of finely grated Parmesan cheese, 1 garlic clove finely grated or 1/8 tsp garlic powder, 1 tsp apple cider vinegar
    • Instructions: Preheat oven to 230 degrees (F), use a knife or mandoline slicer to cut zucchini into thin slices, place cut zucchini in a bowl, add salt, Parmesan cheese, garlic and vinegar, toss to coat, bake for 1 1/2 hours.

KEY LIME PIE: Nairn’s have brought out a gluten free new product and it is perfect for tart/pie bases. @nairnsoatcakes new Oaties have a lovely buttery taste and crumbly texture. The sharpness of the limes in this recipe go perfectly with the new Oaties. Recipe below:
Ingredients (and options for substitutions which our Nutritionist added):
1 1/2 packs of Nairn’s Oaties
120g of butter 
3 medium egg yolks
1 tin of condensed milk / sub coconut milk
finely grated zest and juice of 4 limes
200ml double cream / sub coconut milk
1 tbsp icing sugar / sub monkfruit
extra lime zest, to decorate

Method:
1)Smash the biscuits in a plastic bags until fine and add 120g of melted butter, press into a tart tin and bake in the oven – gas mark 3 for 15 mins.
2)Put 3 medium egg yolks in a large bowl and whisk for a minute with electric beaters.
3)Add a can of condensed milk and whisk for 3 minutes, then add the finely grated zest and juice of 4 limes and whisk again for 3 minutes.
4)Pour the filling into the cooled base then put back in the oven for 18 minutes. Cool then chill for at least 3 hours or overnight.
5)To decorate, softly whip together 300ml double cream and 1 tbsp icing sugar.

I’ll Start By Telling You a Story…

Zaramama is the Inca Goddess of Grain

In ancient times, Incan Queens were responsible for agriculture in their societies.  Agriculture and weaving were two key factors in the lives of the Inca.  You may be asking yourself “woman in charge of agriculture, but why?” 

The answer is because women were “associated with the selection of seeds,” due to the fact that “cosmologically…women and the goddesses are forces of fertility” (Silverblatt 44).

So how does this relate to Quinoa?  The Incan diet used this amazing ancient grain as a primary source of nutrition. It was the
Gold of the Inca’s” as they believed that it increased the stamina of their Warriors.  Incan Queens were responsible for selecting the very best seeds that would be grown by the women of their society.  The Queen was honored to conduct seed selection and prided herself on this duty.  Once seeds were selected, the upper class women of society took fine care of growing the crops.

Imagine living in a day where every single process of your nutrition was held in the highest regard by the highest members of society. Imagine eating quinoa grown for the approval of Zaramama, the Goddess of Grain.

Meet Christopher Algea.  He developed the idea for a company called Keen One Quinoa while in College in Boulder Colorado. After College he went to work and launched his company. Their mission is to promote creative meals, use sustainable ingredients and source organic, fair trade quinoa, benefiting cooperatives in the Highlands of the Andes Mountains.

A few college buddies worked with Christopher start the company by developing Quinoa products in a commercial kitchen and taking them to farmers markets.  Today, they have created heat and serve cups that make eating this amazing ancient grain delicious, easy, convenient and ready in 5 minutes! Zaramama, the Inca Goddess of Grain must be dancing in the clouds celebrating the beautiful company. Keen One Quinoa.
