Fit Snack Favorite Recipe

Grandmas Green Chile

On medium heat cook:
2 lbs. Diced Pork Tenderloin or roast (approx 1/2″ cubes)
In 2 qt bowl pour together
1 8oz can diced tomatoes
2 Cloves Garlic finely minced
1 to 2 cups roasted green chili
1/2 tsp Garlic salt
1/2 tsp Salt
2 Carrots peeled and finely diced
Mash mixture together with hands break up with fingers. Add:
1/2 Medium Onion chopped
1 carrot peeled and finely chopped.
2 medium potatoes peeled and finely chopped
Water to cover over mixture approx 1″
Leave mixture in fridge for up to 8 hours.

Add to cooked pork in hot cook pot. Bring to boil. Reduce heat. Cover and simmer for approx 45 minutes.

Grandma always makes something delicious to serve with her special Green Chile. We decided to add a fried egg, sautéed tomatoes and shredded cheese. Enjoy!

Have you considered your New Years Resolution?

It might seem like a daunting task, let us help make it easier. The new year is a time for new beginnings and a fresh start so why not start with you. Set yourself up for success this year with a solid resolution and plant the seed for change in your life.

One of the most inspiring quotes I read this year talked about how important it is to do good for others, but ended with how important it is to do something great for yourself. We forget how crucial it is to first be kind to ourselves and invest energy in ourselves before we can be great for others. So here is our call to action to invest in yourself and be the change you want to see.

Here are some simple tips to consider to help you come up with a great New Years resolution. You can’t go wrong when you’re trying to improve. We even included some fun examples from our Fit Snack Team.

“If you’re better, everything will be.”

1. Be realistic – focus on 1 obvious thing you want and/or need to change
~Be specific. What Exactly do you want to IMPROVE? Now what do you want to do to manifest it?
Here’s an example: “I want to start swimming consistently so I can have an edge”. More specifically, “Since I want to swim competitively, I will join a masters swim team and I’ll show up to every practice.”

2. You need a back up plan for your resolution – A little something I like to call Plan B – Prep for it, then prepare to make mistakes and have a Plan B. This helps you to be realistic with yourself about what you can do to eventually achieve what you want.

~Plan B Ex: Anita – “I missed practice and have failed” v.s. “I’ll go to 3 practices a week and work up to 5.”

3. Succeed – if you’re determined you will. With a solid plan you can’t fail!

How To Eat More Fruits & Veggies!

Eating Fruits & Veggies are Essential

Here are some tips on how to develop fruit and veggie habits:

If you do not eat a lot of fruits and veggies, your body will need a little time to adjust to the lifestyle. Here is a quick 1, 2, 3 on how to make small adjustments, which will result in huge gains later.

  1. Fruit: Eat fruit in the morning. A few great options are blueberries, raspberries (each lower in sugar) or apples (higher in fiber). From there, you can even add various color combinations, making your AM fruit a fun adventure. We also recommend a play on your favorites, using fruit like frozen grapes in place of popsicles or ice cream.
  2. Veggies: Start by adding 1 type of veggie to each meal. If you are not sure where to start, go for whatever is in season. Examples are; scrambled eggs or egg whites with Kale or Spinach for breakfast, a Tuna Salad with Green Beans for lunch and Lean Steak with Brussel Sprouts for dinner. Brussel sprout cooking tip – Cut Brussel Sprouts in half, saute’ on hot pan making them slightly charred, then roast in oven at 350 until soft. A little oil and balsamic will sweeten them up!
  3. Final Step:  Our final tip is to make sure that you are eating healthy snacks in between meals. This will keep your pallet on point to appreciate the fruits and veggies to come. Before you know it, you’ll be eating lighter, healthier and fresher.
