Dinner the night before: Spaghetti topped with marinara sauce with lean bison meatballs.

“These carbohydrates would keep my glycogen levels high, to ensure my energy would be spread evenly throughout the day. Also, helping me get a good nights rest.” – Anita

You can never go wrong with healthy carbohydrates pre race, pre workout or pre anything that requires a ton of your energy!

Morning of Triathlon:

1 cup oatmeal with flaxseeds and honey

½ cup of almonds & blueberries as a snack

6 cups of water pre race – spread throughout the morning

1 hour Pre Race:

1 can of Safe Catch Tuna

1 cups water

Snack During:

One Bar Fruit Bar

The right snack during a race can be difficult to find, but this Fruit Bar offers light and healthy carbohydrates to keep you going strong.

2 cups water

Post Race:

4 cups of water

¼ c. Almonds

1 bag Protein cookies from Bite Fuel

Followed by more water!! These foods and snacks served as fuel for a 1/4 mile swim, 10 mile bike ride and a 2.6 mile run![/vc_column_text][/vc_column][/vc_row]

Last night, our founder, Rose, cooked Wondergrain’s Sorghum and incorporated it in an original recipe – Fit Snack’s Shrimp Tandoori Curry. As I savored the mix of flavors, it brought to mind a slew of possibilities for recipes. When I asked Rose where she had found her recipe, to my surprise she created it herself. Sorghum will inspire you to think out side of the box to create meals that incorporate the light whole grain and leave you feeling perfectly satisfied. What is Sorghum, you ask?

Deemed Whole Grain of the Month for June 2015 by the Whole Grain Council, it is a very special ancient whole grain. Sorghum is unique, not only because of its versatility in the kitchen, but because of its resilience as a crop. This ancient grain is only now being rediscovered in the U.S., but in other countries it has been a primary cereal grain. Here are some names you may have heard before:

 

“Sorghum [Sorghum bicolor (L.) Moench] is known under a great many names: milo, guinea corn in West Africa, kafir corn in South Africa, dura in Sudan, mtama in eastern Africa, jowar in India and kaoliang in China.” –Whole Grain Council

 

Wondergrain Sorghum is unique in that it is the fastest cooking Sorghum on the market. This product is so easy to include in your Sunday meal prep because the grains never get soggy and they hold all of their nutrients. Unlike other whole grains, this ancient grain does not have an inedible hull and the outer layer can be eaten while retaining all of the nutrients.

Rose Muniz, a Denver native and international business consultant, experienced firsthand the difficulty of finding healthy snacks on the go.  She developed Fit Snack, a monthly subscription box, to save consumers time and money while discovering delicious full-size goodies. Rose and her team of nutrition experts curate their taste-tested top picks each month from thousands of local regional and specialty items helping her subscribers turn time spent at the market into time spent getting fit.

Rose’s passion for healthy living started when she was just a child she always ordered salad on Pizza night. Her journey was a continuous evolution as Rose’s family grew up on traditional Mexican American dishes with little focus on balanced whole food nutrition. She accepted this challenge and has since been an inspiration to her family including a recent clean eating pantry delivery to her Grandmother. Rose is also proud to be congratulating her baby sister and best friend on her graduation in Human Nutrition and Dietetics and on becoming a certified personal trainer this year.

In addition to a focus on healthy life and corporate success, Rose co-found non profit Hope Connects with her best friend in 2010. The two and their supporters have impacted lives of women and children throughout Africa and locally in Colorado.
